Extended Maceration

Extended Maceration

Fermentation on skins for 38 days extracts the more complex tannins from the skins and seeds, in a wine making technique called extended maceration. The result is a wine with great depth of structure and mouthfeel, delightfully complex with wonderful savoury flavours.
