Description

38 DAYS, a premium blend of Cabernet Sauvignon and Shiraz is our flagship wine. A great Australian blend showcasing the elegance and fruit flavours of McLaren Vale’s iconic varieties.

Red wine is typically fermented on skins for 5 to 8 days; however, this wine has been taken to the extreme of 38 days. Winemakers call it extended maceration, where the wine is left on the skins for a longer period of time. Slow fermentation over 38 days extracts more complex tannins from the skins and seeds. The reward is a wine with a great depth of structure and mouthfeel, delightfully complex with wonderful savoury flavours adding to the experience.

This is the first of what we plan to be annual releases. 38 DAYS 2012 is Cabernet Sauvignon dominant in a blend of Cabernet Sauvignon and Shiraz. In the years ahead the varieties may change with the influence of the seasons but the practice of 38 day extended maceration will not.

38 DAYS matched with the likes of a leg of hogget slowly cooked in a deep and mysterious sauce will prove to be – A wine made for eating.

    A blend of cabernet and shiraz. The focus is on a cool-ferment and post-ferment maceration for 38 days, lengthy, but not unprecedented. It has not extracted an overburden of tannins, on the contrary, they are fine, leaving the juicy blackcurrant and blackberry fruits ample opportunity to play tag with each other on the long palate.
